Broad Street Run and Cottage Cheese Quesadillas

Hello, hello! I hope everyone had a wonderful Easter weekend. Mine was nothing out of the ordinary…class, work, study.

Today’s post is kind of all over the place, but I guess I have random things to share!

Okay, I know these are enough selfies for the rest of the year, but I finally got a haircut.

I ended up chopping off 12 inches to donate to Pantene Beautiful Lengths. I was originally going to donate it to Locks of Love, but after someone suggested doing some research on them, I decided against it. I read great things about Pantene Beautiful Lengths, so that’s who I ultimately decided to go with. I wasn’t too sad about losing a foot of hair the day I got it cut, but I’m starting to miss it more and more. I guess it’s just hair though, and hopefully, it will grow back in no time.

Secondly, I’m signing up for another race! The Broad Street Run is a 10 miler in Philadelphia on the day after my last final. I definitely told myself after the Rock ‘n’ Roll half marathon that I’d probably never run a race again, but when a friend asked me if I wanted to do a race in Philly this spring/summer, I couldn’t stop myself from saying yes. Even though I am still not a fan of running, I think I’m addicted to the accomplished feeling after completing such a long run. I’m so excited to have something to look forward to immediately after this semester ends.

Yesterday, I discovered my new favorite meal. Quesadillas are one of my favorite foods. I didn’t have any cheese on hand, so I decided to use cottage cheese to make a turkey and spinach quesadilla. I honestly thought it couldn’t be that good because cottage cheese just isn’t the same as ooey gooey shredded cheese, but it was the bomb.com.

I’m not sure I can convince anyone to try this, but you should just do it. It will blow your mind. Don’t forget the salsa!

I’m off to study a little more before calling it a night.

  1. Is that the Ezekiel tortilla? So happy about the treats we got from Whole Foods. How was the salmon?

    • Yes, it’s the Ezekiel tortilla. So delicious! Can’t wait to go to Whole Foods again the next time you come :) The salmon was really, really good. Very meaty!

    • Thanks girl! I used to hate cottage cheese too, but I realized I just can’t eat it plain. You should definitely try the quesadilla..I think you’re the only other person who’d like it as much as I do haha!

    I started putting cottage cheese in my spaghetti squash “spaghetti” – never thought it would go, but super yum!

    • Thank you! I guess I should look a little more professional now that I’m not a baby anymore.. You should definitely get that shirt. It’s SO comfy. I’m thinking about buying another in a different color.

      Cottage cheese in spaghetti squash is such a great idea! I love “creamy” pasta, so I definitely want to try that as soon as I can get my hands on another spaghetti squash!

  3. I can’t believe how long your hair was!! That must have been a royal pain in the ass to wash/dry/style/carry. The no ‘do looks great though! I saw the quesadilla on instagram and I love the idea of using cottage cheese! I might have to try that myself, maybe with pizza?

    • It was such a hassle..my hair would always get stuck in my armpits hahaha so awkward! Luckily, I have no one to impress around here, so I never did anything with it after I got out of the shower. I am stealing your pizza idea. I don’t have any dough (although I guess I could use a tortilla), but I will make that tomorrow with English muffins..baby pizzas!!

    I also think every runner goes through a time when they say they’ll never run a race again and then always end up signing up for another one :) We’re crazy like that!
