Good morning, friends!
I only have a week and a half left of classes before finals, yay! Where has the time gone? Even though it’s going to be a rough few weeks, I can’t wait to enjoy my winter break (mostly) study-free. I have an exam the second day I get back from break. How does that even happen?!
Did you know the first day of winter isn’t until December 21? I assumed it’s already winter since it has snowed a few times. Anyways, I figured I’d update my fall bucket list. I guess technically I still have time to do a few of the things I had hoped to do before fall is over!

I have done everything that is starred. I’m pretty excited to see that I’ve crossed off most of my fall bucket list! “Attend a bonfire and make s’mores” is starred on the other side because I didn’t attend a bonfire, but I did have s’mores with Josh when we visited Max Brenner. That counts, right?! I also made raw chocolate and pumpkin peanut butter cups for “create healthy Halloween candy recipes” and “make a new pumpkin dish”. I definitely promised the recipe for the pumpkin pb cups when I perfected it, which I still have not posted. Oops, bad blogger. I think I’ll make that a priority when finals are over.
On to What I Ate Wednesday hosted by Peas and Crayons!
Breakfast is my absolute favorite meal, so I rarely skip it. When my alarm went off yesterday morning, the last thing I wanted to do was eat. I almost decided to pass on breakfast and sleep in for 30 more minutes, but I talked myself into getting in a healthy meal before the day started. I had 2 eggs, 1 egg white, and a grapefruit. I love grapefruit! I’m so glad I ended up having breakfast because it always sets a healthy tone for the rest of the day.

To fuel me through the next few hours of studying, I made a snack of greek yogurt with stevia and raw cacao nibs.

Luckily, my mom made me a bunch of my favorite dumplings to take with me back to Philadelphia. This definitely saved my butt because I didn’t have time to cook up a meal. Thanks mom!

I grabbed two of these “moon cakes” before heading off to class (also courtesy of my mom). Inside these little pie crusts are a mixture of various nuts, oats, and honey. They are so, so good and do a great job of keeping me full for a few hours. Great success!

I felt pretty bad for not eating ANY vegetables all day (except for the tiny bit of cabbage in the dumplings), so I made one of my favorite dinners with a boatload of broccoli slaw – “Pad Thai”. You know when you eat so fast that you barely remember eating? Yeah, that happened. It was just too delicious!

I should probably do a little better on the veggie front today.

I stink at eating veggies.. If I could live on meat, fruit, and nuts, I’d be all set.. lol. But the veggies? Just so hard to squeeze them in!
Looks like some delicious food.. and I may need to break down and try this Pad Thai; I’ve seen it on a few blogs lately!
I feel ya girl! It’s one more annoying thing you have to cook! Definitely try the Pad Thai, especially since you eat Paleo. I think you’d love it!
That Greek yogurt + cacao combo sounds fab! I love plain Greek yogurt & once I mixed it with some crumbled dark chocolate from a Taza bar I had received to review. It was an amazing combo.
The dumplings and moon cakes look so fabulous! But you know what looks more fab? That cocktail you are holding in your righthand sidebar pic. What IS that? Looks right up my alley.
Hahaha I LOVE you already. Dark chocolate is heavenly. I believe that fab looking cocktail is a pomegranate martini from Ruth’s Chris. If you ever go there, you have to try it!
I have been there once! I got a cocktail with Grey Goose pear. I love my Goose but will keep your martini in mind if there’s a next time! I saw they have happy hour til 8 on Sundays and wanted to go make a dinner out of the bar bites and cocktails some night.
I’m a vodka girl too, but the martini attracted me because it was pomegranate! I wish I had a Ruth’s Chris near me..happy hour on a Sunday sounds good to me!
Ahhh I finally made your pad thai recipe! So so so good! I love broccoli so the broccoli slaw was perfect for this recipe. I also put some leftover salsa in. Thank you for always being such an inspiration for being healthy:)
I’m so happy it turned out great! I could literally eat it for dinner every night. So addicting!
the best thing i did this fall was venture out of my comfort zone and try to be more positive person! reading that you made s’mores made me want them more than i already do (which is a lot!) lol

Congrats on the bucket list! That’s a great idea. I made a bucket list of small manageable things that I wanted to accomplish in 2013 and put it up on my blog. I’m so happy I did!
I’ll have to check it out! If I didn’t have a blog to put this kind of stuff on, I’d probably never follow through.

I’m guilty of completely forgetting to eat veggies the whole day too, then going veggie-crazy at dinner trying to make up for lost time! I just love it when my mom sends me back to school with a nice stock-pile of food, its a lifesaver when I don’t have time to cook!
Yesss, I totally don’t realize sometimes how much time cooking takes out of your day! Thank gooodness for our mothers
